Buying a Soft Serve Machine: Gravity or Pump? The Guide
A soft serve machine is rarely an impulse decision: It costs as much as a small car, stands at the same counter for twenty years, and influences daily how fast the queue moves. This guide leads you through the four questions that really matter for the purchase — gravity or pump, how much capacity, which connection, and what the operating costs are. By the end, you will know which device class matches your operation before requesting your first quote.

Gravity or Pump? The One Decision That Determines Everything Else
Soft serve is made by freezing liquid mix in a cooled cylinder while whipping air into it. How this air is introduced distinguishes the two designs — and this affects yield, consistency, and cleaning effort.
Gravity machine. The mix flows from the storage container into the cylinder solely by its own weight; air is only incidentally incorporated. Fewer components, fewer seals, faster cleaning. The ice cream becomes denser and creamier — and fewer portions come out per litre of mix.
Pump machine. A pump delivers mix and air metered into the cylinder. The air content can be adjusted, the ice cream becomes lighter and holds better in the cone, and significantly more portions result from the same amount of mix. However, more parts need to be disassembled and cleaned, and the technology is more complex.

Rule of thumb: If you sell a few hundred portions per year and value easy cleaning, gravity machines are better. If you do large volumes daily, the pump’s higher cost is regained through increased yield — often within one season for several hundred portions per day.
How Much Capacity Do You Really Need?
Manufacturers specify capacity in portions per hour, usually at 75 g. This number is a continuous value measured under laboratory conditions — in practice, what matters most is whether the machine can handle the peak: the afternoon at the outdoor pool, the half-hour after the cinema, the Sunday after church.
For context from our own range: The smallest tabletop units handle about 200 portions per hour, the largest freestanding units over 1,200. Everything suitable for normal operation lies between these values.

One or two flavours? Twin-flavour machines feature two cylinders and can additionally dispense both flavours swirled together — so two flavours become three menu options. This costs extra and requires more space, but also doubles cleaning effort. For an operator offering soft serve as an additional product, a single flavour usually suffices.
Connection and Placement: The Factors That Can Blow Up Quotes
The device price is one half. The other half is decided locally:
Electricity. Tabletop units often run on 230 V, larger freestanding units require three-phase current. Whether the supply line is correctly positioned and the circuit protection sufficient must be clarified before ordering — not on delivery day.
Air or water cooling. Air-cooled machines need free space around the device and release heat into the sales area — noticeable behind the counter in summer. Water cooling operates quieter and independently of room temperature but requires supply and drainage. Many models are optionally available with either cooling type; in our range, water cooling adds around EUR 575 net depending on the model.
Space and air intake. Consider air clearance all around, not just the device dimensions. A machine receiving insufficient air in a niche cycles more frequently, loses capacity, and breaks down sooner.
Assembly and instruction. For most brands — and mandatory for Carpigiani — commissioning and instruction must be handled through specialist dealers or authorised service partners. This isn’t a sales trick: Mistakes during first filling, pasteurisation, and cleaning are the most common causes of warranty disputes.
Operating Costs — and Where Self-Pasteurising Machines Save Money
After purchase come four ongoing expenses: mix, electricity, cleaning, and maintenance. Cleaning is the most interesting because it consumes labour time.
Without pasteurisation, food hygiene regulations require daily disassembly and cleaning: empty cylinder, remove piston and seals, clean and disinfect everything by hand, reassemble. Expect 30 to 60 minutes — every day, often at the least convenient time.
Self-pasteurising machines regularly heat the mix inside a closed circuit to pasteurisation temperatures and then cool it down again. This significantly extends the interval for complete disassembly — up to 30 days in modern machines. The extra cost quickly pays off once you realistically consider the saved labour at your hourly rate.

How Much Does a Soft Serve Machine Cost?
Reliable prices are rarely found online — most search results lead to used marketplaces or "price on request." The Same Machine, Second Business: Açaí
Soft serve machines can do more than soft serve. Açaí puree is delivered frozen and sorbet-like firm and only needs to be kept at serving temperature with the correct consistency — exactly what a refrigerated counter machine with agitator and tap provides. Frequently Asked Questions
Gravity or pump — which is better?
Neither is inherently better; they solve different tasks. Gravity means fewer parts, faster cleaning, denser ice cream, lower yield. Pump means adjustable air content, significantly more portions from the same mix volume, but more cleaning effort and higher purchase price. The larger the daily volume, the more the pump pays off.
How many portions per hour do I need?
The decisive factor is not the daily average, but the peak. Count how many guests come in your busiest half hour and extrapolate. For cafés and bakeries, up to 200 portions per hour usually suffice; ice cream parlours and snack bars range from 200 to 450; above about 450 a freestanding unit is needed.
Do I really have to disassemble the machine every day?
For machines without pasteurisation: yes, this is required by food hygiene regulations. Self-pasteurising machines heat the mix in a closed loop and extend the full disassembly interval up to 30 days. Over a season, this is the biggest factor that justifies a higher purchase price.
Air or water cooling?
Air cooling is simpler — no water connection, but heat release in the room and need for free space around the machine. Water cooling works quieter, independently of room temperature, and is a better choice in tight, warm counter areas; it requires supply and drainage.
