Practical: many fuel gel models can be retrofitted with an electric heater – one device for both worlds.
Lid Shape: Flip or Rolltop?
- Flip lid: inexpensive and robust – but must be opened fully or removed
- Rolltop lid: opens space-saving to the rear, guests serve themselves one-handed – the standard at self-service buffets (also retrofittable)
The Right Size
Chafing Dishes follow the Gastronorm system: GN 1/1 (530 × 325 mm) is the standard buffet size, GN 2/3 the compact version for smaller stations. Several smaller containers can also be placed side by side in the water bath frame – e.g. 2 × GN 1/2. All dimensions are explained in our GN container knowledge.
- Don’t forget the water bath: Chafing Dishes heat indirectly via the water bath – this keeps food moist instead of drying it out
- Keep warm, not cook: fill food hot (above 65 °C) – the device maintains the temperature but does not reheat

How long does a fuel gel burn?
Depending on the can, typically 2 to 6 hours. For long events, keep spare cans ready – changing them takes only seconds.
How many chafing dishes do I need for the buffet?
Rule of thumb: one GN 1/1 chafing dish per main component (meat, side dish, vegetables). For 50 guests with three components, at least three units.
Do foods remain HACCP compliant in the chafing dish?
Yes, as long as the core temperature stays above 65 °C. Electric models with controllers make monitoring easier; with fuel gel, check regularly with a thermometer.
