Equipped with 3 1/3 GN containers with a depth of 10 cm, you can melt chocolate quickly and easily without burning. This chocolate melter operates on the bain-marie principle, meaning heated water ensures even melting of the chocolate.
Three 1/3 GN Containers
This stainless steel chocolate melter comes with 3 1/3 GN containers and matching lids. It has 4 rubber feet to keep it firmly in place on the surface. The display is easy to use and consists of an On/Off button and a digital temperature controller. You can set the desired temperature using the arrow keys, and the digital display allows you to accurately monitor the heating progress. The temperature can be adjusted incrementally from 3 to 100°C. The chocolate melter is fitted with a tap, making it easy to drain. It also features a steam release valve so the steam generated when heating the water can be easily released from the unit.
Melting Chocolate
The chocolate melter is simple to operate. Fill the water tank with water and ensure the water level is between the minimum and maximum lines. Then place the three GN containers into the chocolate melter. It has two intermediate bridges that keep the GN containers in place so they do not float away. Now switch on the chocolate melter and set the desired temperature using the arrow keys. A control light on the display indicates when the desired temperature is reached. When the chocolate melter has reached the correct temperature, you can add around 4 kilos of chocolate into each GN container. Stir the chocolate occasionally and wait until it has sufficiently melted. Then you can remove the GN container from the chocolate melter using protective gloves. Watch out for water droplets that may still hang on the bottom of the GN container. These are hot, and if this water comes into contact with the chocolate, it will cause lumps in the chocolate.
Melted Chocolate
Dark chocolate and milk chocolate are the easiest to melt. White chocolate is more difficult to melt as it burns slightly faster. It can burn already at 36°C, but with this chocolate melter you can set the temperature precisely. For melting chocolate, you can buy special melting chocolate, which is often chocolate chips (also called callets). Alternatively, you can cut a chocolate bar into pieces and heat these. The important thing is to melt the chocolate slowly and evenly. This chocolate melter makes this easy.
Cleaning the Chocolate Melter
Once the chocolate melter has cooled down, you can clean it. Make sure the plug is pulled out of the socket and remove the GN containers from the chocolate melter. Close the steam release valve. Ensure a drain hose is connected to the release valve, or place the chocolate melter next to the sink so the water can drain this way. Open the water drain valve and empty the chocolate melter. Wipe the outside and inside with a soft, damp cloth and dry the entire unit thoroughly. Clean the GN containers and lids with warm water and a mild detergent. When the containers and lids are clean, dry them well to prevent mould or corrosion in the Gastronorm containers.
