Buying Refrigerated Counters: Sizes, Doors or Drawers? The Guide
The refrigerated counter is the all-rounder of the professional kitchen: cooled storage space below, work surface above – all on the same footprint. This guide explains which size you need, when drawers are the better choice, and what matters for upstands and GN depth.
Doors or Drawers?
| Variant | Advantage | Ideal for |
|---|---|---|
| Doors | maximum storage space, cheaper, flexible with racks | stock holding, large containers |
| Drawers | direct access to GN containers without bending down | à la carte kitchen, mise en place |
| Combination | the best of both (e.g. 2 doors + 2 drawers) | most restaurant kitchens |
Many models can be retrofitted: a drawer set converts a door compartment into two drawers afterwards.
The Right Size
Refrigerated counters are chosen according to the number of sections – each section corresponds approximately to one door. Also crucial is the depth: 700 mm is standard and accommodates GN 1/1 containers lengthwise.
| Sections | Width (approx.) | Fits |
|---|---|---|
| 2 doors | approx. 900–1360 mm | snack bar, café, small kitchen |
| 3 doors | approx. 1360–1800 mm | restaurant with continuous kitchen |
| 4 doors | from approx. 1800 mm | hotel kitchen, high throughput |
What to Look Out for When Buying
- Upstand: the raised rear edge protects the wall from splashes – mandatory when placed against a wall, annoying for freestanding counters
- Fan cooling: ensures uniform temperature in all sections – standard for high-quality devices
- Worktop: stainless steel with sufficient load capacity; usable directly as a work surface
- Temperature range: -2 to +8 °C suffices for most applications; watch for lower values for fish or meat
- Feet or castors: castors facilitate cleaning behind – a hygiene plus in many kitchens

Frequently Asked Questions
Can I work directly on the refrigerated counter?
Yes – that is exactly what it is made for. The stainless steel top is a full-fledged work surface; the ingredients are kept refrigerated and ready to hand underneath.
What depth do I need?
700 mm is the standard for GN 1/1 containers. Models with 600 mm depth save space but only hold smaller containers.
Can doors be converted to drawers afterwards?
For many series yes – via drawer sets. Check compatibility for the respective series or contact us.
