For pizza and bread dough, the spiral mixer is first choice: It develops the gluten network optimally without warming the dough – important for long dough fermentation.

The Right Size: Dough Capacity, not Bowl Volume

The crucial factor is the dough amount per mix cycle in kilograms. Rule of thumb for the pizzeria: A dough ball weighs approx. 250–280 g – so a 12-kg mixer can produce around 45 pizzas per batch.

  • Wheels: mixers are heavy; a wheel kit makes the device movable for cleaning

Household and planetary machines knead with high friction. Spiral mixers work more gently – the dough stays cool, yet the gluten network is fully developed.

Is a 12-kg mixer enough for my pizzeria?

Usually yes for up to around 100 pizzas in the evening (two to three batches). Those producing more daily or kneading in advance for long fermentation choose 18 kg or more.

How do I best clean the bowl?

Immediately after kneading with a dough scraper and warm water – dried dough is the main enemy. Models with removable bowls clearly have the advantage here.
