Ceiling Hoods for Professional Kitchens

A ceiling hood hangs freely above the cooking island and captures vapours from all four sides. It is the solution for the island kitchen: here, the stove is in the middle of the room, with no wall to mount a wall hood. For the hood to work effectively, it must extend about 15 to 20 centimetres beyond the cooking island on all sides – rising vapours move diagonally outwards, not vertically upwards.

With motor or without?

  • Without motor: the classic version when an extraction system is already installed in the building – for example, a roof fan or a fan box in the duct. The hood collects and filters, the air is moved by the existing system.
  • With motor: all-in-one device. Useful when no duct is available or the existing system cannot handle the additional air volume. Models with controller allow adjusting the performance to the operation – full power at lunch, quiet in the evening.

What matters when choosing

  • Air volume: It depends on the output of the devices underneath, not on the room size. The design is regulated by VDI 2052; on request, we calculate it for your kitchen.
  • Flame protection filters: Mandatory above open flames and deep fryers. They are removable and must go into the dishwasher; otherwise, extraction performance decreases noticeably.
  • Supply air: What is extracted must be replaced. Without supply air guidance, the hood performs poorly and doors slam shut.
  • Lighting and drainage: Integrated lights save a separate installation; a grease drain valve eliminates the need to wipe out the collection trough.
