Ventilation & Exhaust Technology

Good kitchen ventilation ensures fresh air, less grease and a pleasant working environment – and is mandatory in commercial kitchens: Where cooking, frying or deep-frying takes place, vapours and grease aerosols must be reliably extracted. At Gastro-Nik, you will find extractor hoods, wall-mounted hoods and ventilation motors from Bartscher, Chromonorm and other brands.

Which hood for which kitchen?

  • Wall-mounted hoods are the standard above appliances on the wall – cooker blocks, deep fryers, grills. The overhang is important: The hood should overhang the front of the appliances by at least 200–300 mm to reliably capture rising vapours.
  • Ceiling hoods (island hoods) belong above freestanding cooking blocks and capture vapours from all sides.
  • Box hoods with larger volume buffer steam peaks – useful above combi steamers and dishwashers.

Correctly dimensioning exhaust capacity

The required air volume depends on the appliances under the hood: The higher the connected load and the fattier the food, the greater the volume flow required. For the precise design of commercial kitchens, the VDI 2052 guideline is decisive – as a rough guide, cooking areas need multiple air changes per hour; a household standard is never sufficient. Also pay attention to the filter type: Metal flame protection filters are mandatory above open cooking areas, they are suitable for dishwashers and must be regularly cleaned – this is also part of fire protection and hygiene requirements.

With or without motor?

Hoods are available with built-in motors (easy installation, short distances) or for connection to an external exhaust motor – the latter is quieter in the kitchen and the better choice for long exhaust routes. Accessories such as replacement filters and controllers are also available from us.
