High-speed ovens for catering and snack outlets

A high-speed oven cooks, gratinates and regenerates in a fraction of the time a conventional oven needs. It combines microwave with hot air: the microwave heats the inside, the air provides browning and a crust. Here you can read where such an appliance pays off, what to look for when choosing one and which models we offer.

Where a high-speed oven pays off

Wherever guests do not want to wait and the kitchen is small: cafés and bakeries with a snack counter, bars, kiosks, petrol stations, canteens serving to order and delivery kitchens. Typical uses are filled baguettes and paninis, pizza, tarte flambée, croissants and pre-prepared dishes that need to be hot to the point and still crisp.

The appliances in our range work without an extraction hood because they break down vapours and odours via built-in catalysts or filters. This means they can also be set up directly at the counter.

What to look for when choosing

  • Power supply: Most models run on 230 V. For the highest output there are 400 V versions that need a three-phase connection.
  • Cooking chamber: What matters is what has to fit inside. Around 17 to 24 litres is usual, and the base usually measures about 30 × 30 cm, enough for a pizza.
  • Magnetrons: Two microwave sources distribute the energy more evenly and heat faster than one.
  • Operation and programmes: Stored recipes with pictures ensure that everyone on the team gets the same result. Programmes can be transferred to further appliances via USB or Wi-Fi.
  • Cleaning: Rounded cooking chambers, removable filters and cleaning guidance on the display save time every day.

Frequently asked questions

What is the difference from a microwave?

A microwave only heats. A high-speed oven combines the microwave with hot, directed air and browns at the same time. Bread and dough turn crisp instead of soft.

Do I need an extraction hood?

Not for the models in our range; they work with built-in catalysts or filters. The minimum clearances in the manufacturer's manual must still be observed.

Is a normal socket enough?

For the 230 V models, yes; they come with a Schuko plug. Because they draw up to 3.6 kW, they must not be run on extension cables or multi-socket strips. The Virtus Boosted model needs 400 V.

Which model suits me?

That depends on space, power supply and what you serve. Call or write to us and we will help you choose.
