Combi steamers & convection ovens for precise cooking
The combi steamer – often also called convection oven in practice – combines hot air and steam in one device and is regarded as the all-rounder of the modern professional kitchen. Baking, roasting, steaming, regenerating – restaurant, hotel and canteen cover nearly all cooking methods space-efficiently with this. Buying a convection oven: What is the difference to the combi steamer?
Strictly speaking, a convection oven is a hot air oven with steam injection: it cooks with circulating air and can add steam but does not measure and control humidity exactly. A combi steamer precisely controls the humidity in the cooking chamber as a percentage and additionally masters pure steam cooking at 100 °C – for example for vegetables, fish or rice. In everyday kitchen use, both terms are often used synonymously. For baking, gratinating and regenerating, often a convection oven is sufficient; those who produce fresh daily benefit from the climate control of the combi steamer. What to consider when buying?
- GN standard & capacity: Compact units operate with GN 2/3, the standard class with 6 or 10 racks GN 1/1, large kitchen equipment with GN 2/1. Rule of thumb: For a restaurant with 80–100 seats, 10 racks GN 1/1 are a common size.
- Climate control: Precise steam and temperature control ensures even, reproducible results and less weight loss in meat.
- Connection: Small units run on 230 V, from the mid-performance class three-phase power (400 V) is standard – clarify the connection before purchase.
- Steam generation or boiler: Direct injection is cheaper and low-maintenance, boiler units provide more constant steam during continuous operation.
- Cleaning: Automatic cleaning programs save working time daily in practice.
